Lol, ooh yeah. And even if you don't pick up Everything- you still are dragging your feet and probably miss the Giant on the way to Whiterun unless you have a follower. (And sometimes even then >.<)

I'm the same way. I'm a packrat and hate leaving anything behind, even little stuff, yet I also hate being forced to go slow and walk or run back and forth between the dungeon and towns because of that. So I don't feel too bad using the console to give myself a stupid-high carrying weight, that way I don't have to deal with the slowdown. Thankfully, it's the only console power I abuse so I don't ruin my experience by making the game too easy for me. 

Actually, I find Skyrim is much fairer than past TES games in preventing you from abusing this (giving yourself a stupid-high carrying weight). You no longer carry alchemy equipment on you, so no more making potions and poisons on the fly, meaning I'm slowed down and prevented from doing that unless I go to town or get lucky finding one at a location, which is a limitation I actually like, giving me even more reason to hang around towns rather than out exploring. The same thing applies to ingots and ore, as I either need to get lucky or go to town in order to use them. There's no instant way in which to use the resources you pick up and steal (which I also have a ton of because I can't find the Thieves Guild or a fence, which I don't mind). Towns are more valuable because nothing can be done on the fly; you need to go to town so you can use the alchemy bench, enchanting table, cooking pots, and blacksmithing equipment. Not only does this cause you to keep those tons of items for longer as you can't get rid of them or make use of them right away, it gives you something to do while waiting for the shops to open and people to wake up. 

Granted, it's still an abuse of console, but having that massive inventory feels more limited in Skyrim because of how much more dependent I am on the towns now. I'd still use it even if that wasn't the case, but that's because I don't want my experience to literally slow down because I'm practically OCD in these games and must take everything I see. And it doesn't really make the game easier as, due to the town-dependency, very little of what I pick up can benefit me right away, like new armor and weapons, keeping that normal. Plus, I usually play on above-average difficulty as a way to counter my hording behind, which feels like a bigger penalty than the benefit I gave myself. 

Does anyone else do this or do I just sound like a cheating loon trying to justify myself? I don't care either way; I'm just curious.

Naa, you're not a cheating loon lol. I just wish I could do that on my ps3 >.<
...I suppose making way too op carry weight enchantments balances it out.

Thanks for the info, though I ironically stumbled into the guild like two days after I made this post while I was just exploring Skyrim and filling the map. But thanks for it anyway. 
As for the ps3 thing, I feel for you. I've been in that position before and it really drags. It's why I always try to get the PC version. Plus, mods to fix the broken stuff, like cooking and destruction magic being kind of useless in vanilla, or make the game more immersive. 
And carry weight know, I haven't done it, but the game is supposed to be so easy to break with enchanting, alchemy, and smithing, giving you stuff with absurdly high stats, using those methods for that is probably the most non-game-breaking thing you can do.

I like just wandering around and finding things, especially the things that change- like items.
